Spicy Honey Brushed Chicken

This is my family's hands-down favorite chicken recipe. I've prepared this with chicken thighs, chicken breasts, chicken tenders; it has been wonderful with everything we had tried. A friend introduced me to the blog, For The Love of Cooking, a few years ago and I truly love it. Pam's blog is the first food blog I followed and explored and I owe her big-time. So, thank you again, for a terrific family favorite recipe. We had this for dinner last night with a simple Rice Pilaf and Roasted Vegetables. We all enjoyed it.

8 boneless and skinless chicken thighs
2 tsp garlic powder
2 teaspoons chili powder
1 tsp salt
1 tsp cumin
1 tsp paprika
Pinch of crushed red pepper
6 tbsp of honey
3 tsp cider vinegar

Preheat the broiler. Line a baking pan with tin foil then spray with cooking spray.
Combine the garlic powder, chili powder, salt, cumin, paprika, and crushed red pepper together in a bowl then mix well. Season the chicken thighs evenly with the dry rub on both sides. Place thighs on the baking sheet. Spray each chicken thigh with cooking spray. Broil the chicken for 4-5 minutes on each side. (for chicken tenders this was closer to 3 minutes on each side)

Combine the honey and vinegar in a small bowl, stirring well. Remove the chicken from the oven; brush the chicken thighs with half of the honey mixture. Broil for 1 minute. Remove chicken from the oven and turn over. Brush the chicken with the remaining half of the honey mixture. Broil 1 minute or until chicken is done. Remove from the oven and let the chicken rest for 2-3 minutes before serving.

Side note: If you are using a different cut of meat, be sure to adjust cooking times accordingly. Just keep a close eye on it to ensure the meat isn't overcooking.
